Harvesting:
Fresh: Harvest when the flower cluster is just beginning to show color and open up (when 10-20% of flowers in the cluster are opening up)
Dried: Harvest when the flower cluster is fully open. Hang to dry. We use dried dianthus as more of a textural element, rather than for its colour as we don't find it holds its colour particularly well.
